

Cream of tomato soup
Ingredients
For 4 persons:
- 1 medium-sized organic onion (peeled and coarsely chopped),
- 1 medium-sized organic carrot (coarsely grated),
- 1 large organic potato (peeled and cubed),
- 1 organic celery stick (coarsely grated),
- 2 tablespoons light, mild olive oil,
- 2 tablespoons plain flour,
- approx. 750 g ripe tomatoes on the vine (quartered),
- 3-4 sprigs of parsley,
- 150 ml concentrated vegetable stock,
- 500 ml Provamel Organic Soya Milk Original,
- 250 ml Provamel Organic Soya alternative to Cream.
For a quick alternative: use a 400 g tin of chopped tomatoes in their own juice.
For a less creamy consistency simply replace Provamel Organic Soya Cream with Provamel Organic Soya Milk Original.
Preparation
Fry the root vegetables and onions in the oil for 3-4 minutes until softened. Add the vegetable stock. Mix in the flour, the tomatoes and parsley and let it thicken. Stir until nearly boiling. Cover the pan and simmer for about 20 min. until the vegetables are soft. Add the Provamel Organic Soya Milk Original; pass the stock and potatoes through a sieve to end up with a thick and creamy soup. Stir in the Provamel Organic Soya Cream and heat up again but do not boil. Serve garnished with basil.
Variations
