

Pumpkin soup with pieces of apple
Ingredients
For 4 persons:
- 1 organic shallot,
- 1 organic clove of garlic,
- 400 g organic pumpkin flesh (e.g. garden pumpkin or Hokkaido),
- 1 organic apple, 1 tablespoon olive oil,
- 1 large organic potato,
- 400 ml organic vegetable stock,
- 100 ml white wine,
- 170 ml Provamel Organic Soya Cream,
- 1/2 tsp curry powder,
- pepper and salt,
- 2 tablespoons pumpkin seeds,
- a few leaves of coriander.
Preparation
Peel and chop the shallot and garlic. Peel, de-seed and dice the pumpkin. Wash the apple, remove the core and cut into pieces. Heat the oil and sweat the onions and garlic in the oil. Put a third of the pumpkin aside. Add the pumpkin and simmer for 5 minutes. Add the potatoes and the vegetable broth to the rest of the pumpkin. Bring to the boil and cook for 15 minutes. Blend everything together. Add the wine and 150 ml Provamel Organic Soya Cream, heat up but do not boil again. Season with curry powder, salt and pepper. Add the apple pieces and heat up once more. Add the rest of the Provamel Organic Soya Cream, pumpkin seeds and coriander leaves and serve.
