Soya-coconut soup

Ingredients
For 2 persons:
- 100 g each of organic cherries and organic blueberries,
- 1 tsp organic lemon juice,
- lemon balm,
- 400 ml Provamel Organic Soya Milk Original,
- 50 g Provamel Organic Soya Yofu Plain,
- 2 tablespoons organic creamed coconut,
- 4 tablespoons organic maple syrup.

Preparation
Rinse the fruit and let dry on a tea towel. Remove the stones from the cherries. Mix the fruit with the lemon juice. Rinse 2 lemon balm stalks and shake dry, tear off the leaves. Mix the Provamel Organic Soya milk original, Provamel Organic Soya Yofu plain, creamed coconut and maple syrup together. Chill the mixture. Divide the fruit between the plates. Pour the chilled soya mixture over the fruit. Garnish with lemon balm and grated coconut.
