

Crème brulee with fruit
Ingredients
For 4 persons:
- 125 ml Provamel Organic Soya Cream,
- 125 ml Provamel Organic Soya Milk Unsweetened,
- 1 vanilla pod (split open),
- a pinch of salt,
- peel from 1/2 organic lemon,
- yolks from 3 small organic eggs,
- 35 g castor sugar,
- ½ box raspberries,
- ½ box strawberries,
- 2 tablespoons brown and granulated sugar.
Preparation
Bring the Provamel Soya Cream, the Unsweetened Soya milk, the split vanilla pod, salt and lemon peel to the boil.
Beat the egg yolks with the castor sugar and add to the boiling mixture.
Arrange the raspberries and strawberries in a ovenproof dish (approx. 25 x 16 cm), pour the crème over them and place the dish in a container with warm water for 30 minutes in the oven at 140°C.
Divide the mixed brown and granulated sugar over the cooked crème and caramelise the topping with a blowtorch.
Alternatively you can put the crème back in the oven under the grill.
Serve lukewarm.
