

Kiwi dessert
Ingredients
For 4 persons:
- 500 ml Provamel Organic Soya Cream,
- 75 g sugar,
- seeds from 1 vanilla pod,
- grated peel of 1/2 organic lemon,
- 1/2 tsp cinnamon,
- a pinch of salt,
- 175 g pudding rice,
- 500 g apricots,
- 4 kiwis,
- 100 ml freshly squeezed orange juice,
- 50 ml maple syrup,
- 40 g almond slivers,
- orange segments and mint leaves to garnish.
Preparation
Bring the Provamel Soya Cream and 250 ml water to the boil. Add the sugar, vanilla pod seeds, lemon peel, cinnamon and salt.
Soak the rice in the Provamel Soya cream for 45 minutes.
In the meantime cut the skins of the apricots crosswise, plunge the fruit briefly in boiling water, rinse with cold water and pull off the skins.
Halve the apricots and remove the stones. Peel the kiwis, cut into small pieces.
Mix the fruit with the orange juice and maple syrup and let steep.
Roast the almonds in a dry frying pan until golden brown.
Arrange the rice and marinated fruit on individual plates.
Sprinkle with the almonds slivers.
Serve garnished with orange segments and mint leaves.
