American Style Pancakes

These quick pancakes are just the ticket for a lazy Sunday breakfast. Serve with a couple of handfuls of mixed berries, a dollop of Provamel soya yogurt alternative and a drizzle of honey or maple syrup.

Cooking Time – 10 minutes

Ingredients
2 medium eggs
150g self-raising flour
150ml Provamel soya milk alternative
1 tsp baking powder
1 tbsp oil

To serve: Mixed berries Provamel plain or fruit yogurt alternative Honey /Maple syrup

Method - Beat together 2 eggs, 150g self-raising flour, baking powder and 150ml Provamel soya milk. - Heat 1 tbsp of oil in a large frying pan and spoon in 2tbsp batter. - Cook on a high heat until bubbles rise to the surface. Turn and cook until pale golden. - Serve with a couple of handfuls of mixed berries, a dollop of Alpro soya yogurt and a drizzle of honey or maple syrup.
